A morbid observation
Apr. 3rd, 2005 12:43 pmSo I got a new scale today, one that measures weight, body fat % and water %. I immediately had to figure out how many pounds of fat, water and muscle I had, as I am sure many people do.
However, I then had to go on to figure that adding some back for marbling and water in the muscle and subtracting for internal organs, I would dress out at about 30-35 pounds, ready for the table -- about an 85% processing loss.
I have been away from the meat production industry too long to remember what acceptable processing losses are, but 85% is way too high. Combine high food costs with a high processing loss -- definately an unprofitable animal.
